Gharb Agro's ERP crawls: a load of 38 on an 8-core server

Gharb Agro, a citrus trader in Kenitra, runs its Odoo ERP and its PostgreSQL database on srv-erp-01 (Rocky Linux 9, 8 cores, 16 GB of RAM). Since 08:30, the sales team has been complaining: every purchase order takes almost a minute to open, in the middle of the export season.
